New Take on Taco Tuesday

I had another "if you give a mouse a cookie" moment. Okay, these moments happen ALL the time. But today it was a delicious chain of events.  Usually involve some sort of food anyway. 

I had a brownie for a late lunch (it's spring break- I can do things like that) but was feeling hungry a little while later. I decided I should eat something at least a little healthier, so I made my way to the fridge. I noticed some left over frozen blueberries and decided to make a smoothie.


Tomato, Blood Orange, Carrot, Banana, Sugar Snap Peas, Grapes, Fresh Blueberries, Blackberries, Frozen Blueberries




As I was looking for things to add to the smoothie, I noticed we had cilantro. The cilantro made me want guacamole. We had everything but avocados and a jalapeno. We also were out of milk and eggs too. So I had to go to the grocery store. 

I grabbed a basket, got the milk and eggs, and started heading toward the veggie section. On the way, I saw some tortillas, which made me want tacos. I realized it's Tuesday. Perfect. I didn't want regular tacos though. So, I walked through the grocery store some more. I spotted some egg roll wrappers and decided to make taco rolls. 

When I got home, I made guacamole. Mmmmm!

Onion, Tomato, Cilantro, Salt, Pepper, Lemon Juice, Jalapeno, Avocado


And then I made the taco rolls. 



I squished up some beans and put them on the egg roll wrapper. 

Next I added taco meat that I made earlier. 

I sprinkled on some cheese. 

Finally, I rolled the taco up.



As I was assembling them, the oven was preheating to 350 degrees. I put the rolls on a pan, popped it in the oven, and cooked them for about 15 minutes. 




These rolls dipped in a little sour cream and (a lot of) guacamole are delish! 
Taco Roll Tuesday was a success!
