4 whole, pitted Dates I pre-chop them otherwise they stick to the blade in the food processor too much. |
1 cup raw cashews Process dates and cashews until you have fine crumbs. |
2 Tbsp honey 2 Tbsp Maple Syrup 1 tsp. Vanilla Sometimes I mix them in a little bowl first, sometimes I add them right to the food processor. It doesn't make a difference. |
Add the oats mixture to the cashew/sweets mixture and process until everything is well combined and clumps together. Take out the blade (a lesson I learned here ) and roll the mixture into ping-pong sized balls. You can mix in chocolate chips- I think its easier to just put a pinch of chocolate chips into the balls as I'm rolling them. |
They are delish! They are also easy to flavor in lots of different ways. Add some coconut. Leave out the coco powder and add cinnamon. Really, you can do a lot with these. |
Lunch: BLT
Toasted sour dough bread. I put a little mayo on. Dan likes to tease me about not being able to even taste the mayo because I put hardly any one. It's true- I can't really even taste it :) |
Add some lettuce. I used boston butter lettuce today. |
Put on some tomatoes. |
Pile on the bacon. Most important step :) |

Preheat oven to 350ish. I put some foil over these guys to keep in the moister. Keep them in the oven for about 45 minutes or until you can easily pull the squash apart with a fork. |
Add some pasta sauce and some ground meat. Mix it up and top with a little parmesan cheese. |
This is the sauce I used. It is SO good and made of good ingredients. I also like that we had squash with squash sauce for dinner :) |
